Hot Creamy Soup
This soup is full of nutrition! Have it for lunch, dinner or even a small cup as a snack! It has a mashed potato feel to it!
2 packages of frozen butternut squash (pureed)
1 whole cauliflower head - chopped, steamed or boiled
1 package of low fat cottage cheese
1 cup coconut milk
Salt Pepper to taste
Puree cauliflower and cook with the squash and cottage cheese and milk -- blend them all well (I use a hand blender)
Add sea salt and pepper to your taste
Garnish with scallions
