Chicken with Carrot Ginger Puree

You will need:
Chicken, coconut oil, onions, ginger, low sodium chicken broth, carrots, light coconut milk or skim milk, cumin, cayenne pepper, garlic

Chicken, coconut oil, onions, ginger, low sodium chicken broth, carrots, light coconut milk or skim milk, cumin, cayenne pepper, garlic
- Cube and cook chicken well in olive oil. When done, set aside.
- In the same pot, add coconut oil (small spoonful)
- Saute chopped onions (1/2 small one) and chopped fresh ginger (thumb size) until onions are transparent
- Add low sodium chicken broth to cover the onions and ginger
- Add chopped carrots (2 handfuls)
- Add light coconut milk to cover (skim milk is fine)
- Bring to boil until carrots are fork tender
- Add cumin, cayenne pepper, garlic and black pepper to your taste
- Use hand blender to puree or pour entire mixture into blender to puree carefully
- Pour over chicken and enjoy.
