Breadless Pumpkin Pie
Bottom Crust
1 cup of flax meal
1 cup of walnuts coarsely ground in food processor
4 tbs coconut oïl
¼ tsp sea salt
½ tsp baking powder
Blended by hand and pressed into the bottom of pan
Filling
1 can of pure pumpkin (not pie filling) no sugar added - just pumpkin
1 ½ cup of coconut milk
½ cup egg white
2 tbsp cinnamon
1 tbs powdered ginger
1 tbs vanilla extract
Mix well and pour on top of crust
Topping
Coarsely ground pecan crumbled on top
Bake aat 350 for about 30 mintues - slice and put into little cups
