Breadless Mini Quiches
You could use any veggie combination
6 whole eggs
1 cup egg white
2 cups of coconut milk
4-5 cups finely chopped kale, mushroom, sausage(sausage was cooked and leftover from last night’s dinner)
I topped a couple of them with chopped crushed red pepper for spice.

- Beat first 3 ingredients until fluffy
- Add the rest and mix.
- Line cupcake tray with foil cupcake holders
- Use a scoop to pour mixture into holders, do not fill to the top because they will rise in the oven.
- Sprinkle black pepper to taste
- Bake at 350 degrees until, just slightly firm - should still be a little wiggily because they will continue to cook even when taken out of oven.
